We start with the finest quality chocolate and ingredients. That’s key. My Nana used to have a saying; “you can buy cheap clothes or drive a cheap car, but if it goes into your body, it has to be the best”

I’ve always remembered that and tried to live by that tenet. Plus the better the quality of ingredients and tools, the easier the job, right?

Chocolate can be temperamental (pardon the pun). Temperature, cleanliness, tools and quality chocolate mean that perfectly tempering chocolate each time is a much easier task. Check out the snap and sheen on our chocolates that let you know it’s perfectly tempered.

Chocolate work takes practice. Lots and lots of practice, so that’s what we do here. If I don’t answer the phone, it’s likely because I’m in the middle of tempering, filling or airbrushing every day.
